Shopware 5 is Zend/Enlight with Smarty templates and a legacy plugin system. We still work in it daily: bug fixes, PHP version compatibility, plugin conflicts and security patches, without introducing changes that will make a later migration harder.
Older shops slow down for predictable reasons: an uncached listing, a plugin looping queries, missing indexes and images served at full size. We profile, fix the top three causes and typically recover most of the lost speed without touching the platform version.

It is the thing worth checking first. Older Shopware 5 branches only run on PHP versions that no longer receive security fixes, and your hoster will eventually force the issue.
